    Has anyone else noticed how much better bread tastes these days since manufacturers were advised or forced to reduce salt content?

    Agreed, though some bread still tastes extremely salty. The idea that bread needs salt both for taste and texture is nonsense. Taste is of course 100% subjective - to me salt free bread is clean and refreshing - like a cup of tea or a glass of water. Italian salt free bread in particular is a revelation.
