You can carb load 36hrs prior to the race, complex carbs are best (brown pasta etc).
Carbs day before/morning of race - complex or not - brown pasta suits some but tastes wrong to me; cut down on fibre over the same period - the last thing you want pre/during an event is "toilet issues". Do not let yourself be thirsty - but don't drink too much either - you will spend all night peeing. Unless you are doing something long/hot increasing salt intake is not needed. Food wise, eat what you are familiar with and enjoy - don't try anything new.
