3 large bananas - old speckly ones work best
6 oz caster sugar
6oz butter
8oz SR flour
1 tsp Bicarb - dissolved in a little milk (2tbsp)
1tsp mixed spice
1 heaped tbsp cocoa powder - decent stuff like green and blacks
3 eggs
walnuts - optional
choc chips - optional
cream butter and sugar, add eggs, mash banana, add to mix wack in all the other bits and bobs but sieve flour
it will look all sloppy but that's the idea!
pour into a large ggreased cake tin
bake gas4 160 degrees for about an hour but check after 50 minutes
Daz - I use SR wholemeal flour for carrot cake;)
oh - and i add a couple of narnies and some walnuts - grated orange peel and zest is optional but to be honest I don't like faffing about with it too much:D
im picturing david frantically checking in the kitchen for all the ingredients and finding out he has no speckly bananas

When i bake i never go of a recipe but i only bake simple cakes are buns
I am going to make some of your banana cake this weekend emmilou and take it to my dad's boat with me :D he will be a very happy man! (well he will if I save him some :o )
ooo lovely job - are you putting choccie chips in it or walnuts?
bit of mixed spice is nice!
