I think about twenty have done all three, still not a common occurrence. Of course the upper limit is the number who've done the Ramsay :-)

According to http://www.ramsaysround.com/history/, 'To date a total of 30 finishers of Ramsay's Round have completed the Big Three' (which means you're talking roughly half of all RR finishers), with the three achieved on consecutive days (!) by Mike Hartley and within a season by Helen Diamantides, Adrian Belton and Jon Chapman.
