Covent Garden Soup Co (folks who make those "fresh" soups in milk cartons") have two or three excellent soup making books with many veggie / vegan options. Simple recipes with nice stories too

Try Crank's recipe book (the veggie restaurant in-hiss-London).
On the other hand, a stock cube, some spices and some herbs go a long way.
(When I was vegan we regularly called our meals red slop or brown slop.)
