Thanks BY for your research based contribution. It is interesting but you're right....it is a bit turgid and hard to digest ( bit like the undercooked kale I had the other day) . I am sticking with the diet for now and will get my cholesterol checked next month to check for any indication of change.
Yes I am generally following Low GI but I have about a stone to lose that has been hanging around for a year and if I lose it I might get out of the bottom two at the so-called races that I enter. Must try harder.

Coming up for a year and no ill effects! Weight steady at 12 stone now. I've never eaten better in my life.
Mashed Potato substitute!
Par-boil cauliflower, then whizz it up in a mixer with butter/creme fraiche and parmesan. Add pepper/salt/nutmeg to taste. Eat as is or put back in oven with parmesan sprinkle to get a brown crunchy topping. Major yum yum!!

Coming up for the year now. Running better than ever (taking into account age!) and feeling really good. Actually now feel ill at thought of biccies, cake etc etc. Someone brought some croissants to a breakfast meeting and I really was not interested at all.
I have control of my hunger, my weight is better, my fitness is improved and I have no worries about 'weakening' back to an old pasta/rice/ potato/cake based diet. I love my food and enjoy eating the new variety.
I am, frankly, amazed. And in debt to my friend, Dr Phil Tirman.
