    I was sometimes given pickled beetroot as a child, and as a result I wouldn't touch beetroot for 40 years or so. Then a few years ago there was some beetroot in our organic veg box delivery, and I discovered that raw beetroot , sliced into a salad, is quite nice. I still don't like it cooked; and as for pickled: I believe that the punishment should fit the crime, so the inventor of pickled beetroot should be immersed in vinegar until his flesh becomes flabby and tasteless.

    I like it roasted mixed up with spuds and parsnip for a great Sunday dinner accompaniment .
    I also have a beetroot shot before every major sports event. This was more than a bit vomit inducing the first few times, but stuck with it and now don't have any qualms about knocking it back.

    Actually I have had cold borscht (main ingredient: beetroot juice) a few times, and I quite liked that.

    I love cooked beetroot on salads. I agree with wheezing donkey - nectar.
