More than likely a chemical reaction between glucose, water, and oxygen producing small amounts of hydrogen peroxide and gluconic acid caused the flash when introduced to a localised extreme heat spot.

My honey is now standing in a bowl of hot water (as directed by the instructions). When I can get some out of the container I'm going to see how it likes the microwave on a plate. So brave
Interesting...........it just boiled and became more runny. No blue flashes.
