    My christmas cake has been cooking all evening, and shows little sign of finishing yet.

    Thing is, I'm tempted to give it a helping hand in the microwave, but it won't fit in all the way.

    I'm wondering about wedging the latch things on the microwave, so that it cooks with the door open.

    How far back will I have to stand?

    I've just put this year's cake in the oven.

    Once it's out, it will be nearly time to get the sprouts on.

    125g dried apricots, roughly chopped
    150ml orange juice
    50g butter
    75g runny honey
    50g sultanas
    75g pecan nuts
    50g mixed pumpkin and sunflower seeds
    25g sesame seeds
    150g demerara sugar
    175g porridge oats

    Heat the oven to 190 degrees C/375 degrees F/Gas mark 5. Line the base and sides of a 13 x 25cm (5 x 10 inch) cake tin with baking paper.

    Put the apricots and orange juice in a large pan, bring to the boil and simmer, uncovered, for approx 20 mins or until the apricots have softened. Transfer to a food processor and process to a thick smooth puree.

    Spoon the puree back into the pan and add the butter, honey and sugar. Cook over a low heat, stirring occasionally for five minutes or until the sugar has dissolved.

    Stir in the remaining ingredients. Spoon into the prepared tin and bake for 15 minutes.

    When it's cool, remove from the tin and discard the lining paper. Cut into 14 squares before it cools completely.

    Do you have to use demerara sugar. Can normal sugar not be as good.....since i donw know what it is.

    I think im going to have to take a trip down the backery isle after work 2mz....a little bird told me i should go with banana cake but i think it would get squashed in my bag carrying it....

    it's a loaf....banana loaf...you can do it in a tin and can be pre sliced....tis true is not as solid as a flap jack but very easy to make and no faffing!

    yes you can use normal sugar but demerara is better

    you can modify the recipe too....put choccie in it or whiskey.....worlds your oyster Al... get creative and enjoy, although no-one is adverse to a little bit of flap jack either!
