Found this great recipe for energy bars. Made them a couple of weeks ago and they taste delicious, even the kids like them!
125g dried apricots, roughly chopped
150ml orange juice
50g butter
75g runny honey
50g sultanas
75g pecan nuts
50g mixed pumpkin and sunflower seeds
25g sesame seeds
150g demerara sugar
175g porridge oats
Heat the oven to 190 degrees C/375 degrees F/Gas mark 5. Line the base and sides of a 13 x 25cm (5 x 10 inch) cake tin with baking paper.
Put the apricots and orange juice in a large pan, bring to the boil and simmer, uncovered, for approx 20 mins or until the apricots have softened. Transfer to a food processor and process to a thick smooth puree.
Spoon the puree back into the pan and add the butter, honey and sugar. Cook over a low heat, stirring occasionally for five minutes or until the sugar has dissolved.
Stir in the remaining ingredients. Spoon into the prepared tin and bake for 15 minutes.
When it's cool, remove from the tin and discard the lining paper. Cut into 14 squares before it cools completely.

That said I'm on a promise of real home made Tiramisu (not really cake I know) 'if I'm nice' - the standard recipe but she claims hers is better than any restaurant version!!
Here's a recipe for delicious sweetness!! it's done in stages - but worth the efoort - it's really nice cold the next day too!
Queen of Puddings
BASE
4 egg yolks
1pt milk (full fat is best with a touch of cream too!!! But if we are being healthy then skimmed works!)
1oz butter
2oz caster sugar
grated zest of 1 lemon (or orange - but I prefer it with lemon)
3oz white breadcrumbs
JAM!! whichever flavour takes your fancy
beat eggs in a large bowl
heat milk - NOT boiling just so it's starting to get bubbles round the edge of the pan
add sugar, butter, zest and heat gently until all dissolved
add hot milk to egg -SLOWLY, whisking all the time, stir in breadcrumbs then leave to stand for about 15 minutes
bake this mixture in the oven gas4 for about 30 minutes until it's set
warm jam in a pan 3 tbsps at least!! I usually wack a load in but then I'm greedy!
spread warm jam over pudding base
TOPPING
4 egg whites
6oz caster sugar
make meringue topping - whisk eggs whites until stiff! whisk in caster sugar 1 tsp at a time
spoon mixture on top of bread/jam base pulling up the meringue to make little peaks - you can try and make it look like a lakeland landscape and give the fells names even;)
bake this for a further 10-15 mins until the top is crisp and 'golden' brown

CARROT CAKE
1/4 pt sunflower oil
8oz wholemeal flour
2 tsp baking powder
5oz light muscavado sugar
2oz walnuts - optional
4oz grated carrots
2 ripe bananas
2 eggs
1tbsp milk
(sometimes put orange zest in - not often as prefer it without too much faffing about from the basics!!)
Put all ingredients in a big bowl and blitz!!
SIMPLE:D
Bake gas mark 4 for around 50 minutes
TOPPING
8oz - soft cheese
2 tsp clear honey
1 tsp lemon juice
mix it all together then spread on the COOLED cake
spinkle with chopped walnuts to decorate:D
Just made the above flapjack bars - have to say they are delish!!
I made a few adjustments given what was in (or not:o ) my cupboards
Added - Goji berries, figs, cashew nuts, walnuts, brazil nuts, sunflower, sesame and pumkin seeds and all the other ingredients stated by Mrs Stagger.
Anyone doing Fiendsdale on saturday maybe lucky enough to get one - a flapjack before you all start misquoting me AGAIN!!!:rolleyes:

My flapjack varies, it doesn't always stick together properly :confused: , if I get chance tonight I will make some for Saturday.

Made Mrs Staggers energy bars and Emmilou's carrot cake for post Wilmslow treats at the weekend (can't run very well at the moment so I might as well make myself useful!) and they were both very much appreciated by the hungry half marathoners :)
Made the banana cake yesterday it went down well with all who tried it, not much left now.
I have put some bananas aside to make another batch !

i made a potatoe cheese bake and it went wrong
okay
greased up dish
slice potatoes
slice onion
grate loads of cheese
black pepper
thyme
sage
layer ingredients and pour over 1/2 pint of milk and bake 45 mins
okay i checked it and all was well , so took the lid off and browned it
when i cut into it the cheese had like curdled and stuff ( bolox):(
what did i do wrong
oh and amandas mum has just made me another banana cake
im taking it to club tonight for a tasting
Some cheeses just don't 'melt' too well - you need to make it like a dophinoise!
Very thin slices of spuds layer pots/onion/herbs etc then our on half milk, second layer of the same so milk/cream mix covers everything then I tend to put the cheese over the top rather than mix it through, use a cheese that's good for melting like leicester there's a really nice Italian cheese that I use but buggered if I can remember it's name! Er I'll post it when it comes back to me!
You then need to cook it slowly on a LOW heat in the middle of the oven:D
