1 tsp Bicarb - dissolved in a little milk (2tbsp)
    1tsp mixed spice
1 heaped tbsp cocoa powder - decent stuff like green and blacks
    3 eggs
    walnuts - optional
    choc chips - optional

cream butter and sugar, add eggs, mash banana, add to mix wack in all the other bits and bobs but sieve flour
it will look all sloppy but that's the idea!
pour into a large ggreased cake tin
bake gas4 160 degrees for about an hour but check after 50 minutes
Thanks Emmilou - Made this a few times now and it works out great - it also freezes so make 2 and freeze one for later !

New recipe for you all, went down a treat with the Sale boys after the 12 stage at the weekend.

    Lumberjack Cake:

    2 large apples (peeled, chopped)
    200g chopped dates
    100g walnuts
    1tsp bicarb

Mix all these together with 250mls boiling water and set aside for a few minutes while you get the next bit ready

    125g butter
    225g caster sugar
    1 egg
    1tsp vanilla essence

Beat together and then add the apple mixture and 225g plain flour. Pour into a greased and lined square slab cake pan. Bake in medium oven for 50 mins.

    60g butter
    100g brown sugar
    125ml milk
    50g dessicated coconut

Heat gently in a sauce pan until all combined. Pour over the cake and bake for a further 20 mins.

Sounds a bit wierd I know but tasted lovely

It sure was, and the biscuits were nice also, thanks JLS.

I can't wait for the FLM now, see what wonders you come up with for after that...
