So would it be expensive to takr my bike to the LBS...and say "Here, please but some hydralic brakes on this and bin the mechanical disc brakes please"?

About £150 plus fitting. But for 400-450 you'd get something with hydaulics anyway?

Al, I have a Kona Caldera hardtail that I am wanting to sell... if you are interested? It has got v-brakes though, but otherwise an excellent MTB for you to start out with. I bought it 2nd hand from a friend years ago, thinking I'd use it, but prefer riding the crosser off road! Looking for £250?
